1 pkg375 gWhole Wheat Rotini
2 tbsp30 mLolive oil
2cloves garlic, finely chopped
1 tbsp15 mLRobin Hood® All Purpose Flour
1 can354 mLCarnation® Regular, 2% or Fat Free Evaporated Milk
½ cup125 mLgrated Parmesan cheese
12cherry tomatoes, cut in half
2 tbsp30 mLlemon zest
2 tbsp30 mLchopped fresh parsley or basil
¼ tsp1 mLpepper
¼ cup50 mLParmesan cheese
¼ cup50 mLchopped fresh parsley or basil
1 : Cook rotini according to package
. Drain well. Reserve.
2 : Sauce: heat olive oil in a large deep skillet. Sauté onion, garlic and zucchini until tender, about 5 minutes. Stir in flour. Cook 2 minutes, stirring. Add evaporated milk, bring to boil, cook 3 minutes and stir in cheese. Cook, stirring constantly until thickened, about 2-3 minutes. Stir in tomatoes, lemon zest and herbs. Toss rotini with mixture. Taste and adjust seasoning if necessary. Sprinkle with additional herbs and cheese.
