Ingredients :
2 tsp10 mlolive oil
1onion, chopped
2cloves garlic, minced
3 cups750 mlsliced fresh mushrooms (8 oz/250 g)
1 cup250 mlbeef broth
3/4 cup175 mlshort-grain Italian rice (arborio)
1/2 tsp2 mlItalian seasoning or oregano
1 can354 mLCarnation® Regular or 2% Evaporated Milk
2 tbsp30 mlgrated Parmesan cheese
Salt and black pepper
Chopped fresh chives or parsley
Directions :
1 : Heat oil in saucepan over medium-high heat; cook onion and garlic about 2 minutes or until softened. Add mushrooms; cook 3 to 5 minutes or until softened.
2 : Stir in broth, rice, seasoning and evaporated milk; bring to boil. Reduce heat to medium. Cook 12 to 15 minutes, stirring constantly, until thickened and rice is tender but firm.
3 : Stir in Parmesan. Season with salt and pepper to taste. Serve immediately. Garnish with chopped chives or parsley.
