Ingredients :

2 tbsp30 mLCrisco® Vegetable or Canola Oil

2leeks, white part only, sliced

2sweet onions, thinly sliced

2cloves garlic

1/2 tsp2 mLdried thyme

3 cups750 mLvegetable or chicken stock

1 1/2 cups375 mLCarnation® Regular, 2% or Fat Free Evaporated Milk

salt and pepper

pinch cayenne pepper

Garnish:

1/2 cup125 mLdiced ham or Prosciutto

1/2 cup125 mLdiced Swiss or Cheddar cheese

Directions :

  1 :  In a large saucepan, heat oil over medium heat. Add leeks, onions, garlic and thyme. Cover and cook 20 minutes, stirring occasionally, until very soft.

  2 :  Add stock. Bring to a boil. Reduce heat and simmer for 10 minutes. Remove from heat. Purée with an immersion blender or food processor until smooth.

  3 :  Stir in evaporated milk and reheat soup until hot but not boiling. Season with salt, pepper and cayenne. Serve, garnished with ham and cheese.
