Ingredients :

Cheese

2 cans354mL eachCarnationĀ® Regular Evaporated Milk

1/3 cup75mLlemon juice

1 tsp5mLsalt

Seasoning

Ā¼ cup50mLchopped fresh thyme

Ā¼ cup50mLchopped fresh chives

1clove garlic

Salt to taste

Directions :

Ā  1 :Ā  Place a strainer over a large bowl. Line with cheesecloth.

Ā  2 :Ā  Combine evaporated milk, lemon juice and salt in a saucepan. Bring to a slow boil over medium heat without stirring. Immediately remove from heat. Allow mixture to sit for 5 minutes.

Ā  3 :Ā  Gently pour mixture into prepared sieve. For wet cheese, strain 5 minutes. If you want a firmer cheese, strain 15 minutes. Stir in thyme, chives and minced garlic. Transfer to airtight container. Can be refrigerated for 5 days. Serve on toasted bread or crackers.

Tip(s)

Omit seasoning and spread on toast and drizzle it with honey for breakfast.

Add sugar, vanilla and chopped semi-sweet chocolate or chocolate chips for a sweet version.
